You might think it is funny, but on our last trip to Mexico for summer vacation, the first thing we did as we got there was going to the movies. Of course it wasn’t any kind of movie, it was a movie we were desperately waiting for since the day it was announced on TV and we just couldn’t help but to fall in love not only with the story but with the characters: The Minions. We knew that weekend the movie would be on theaters and my girls were asking for weeks when we’ll be able to go.


I know that when you are on vacation, going to the movies is not the first thing you would do, especially when you go to a place like my home country, were you can easily enjoy a day on the beach, eat delicious food either on the street or on any of the so many restaurant options you have or just spend time with the family. But my kids and I were so excited about it and one of my nieces was happy to go with us too. This is one of those movies you have to go and see in a movie theater. Truth to be told, it was worth it. The movie was so much fun and we spend the time laughing and loving everything about it. 

Minions © 2015 Universal Studios. All rights reservedis one of those movies you also want to watch again and again and that’s why we were so happy when the Blu-Ray/DVD combo was finally released on December 8th. As soon as was available, we bought it!


And what do you do when you have a new movie at home? yes, you have a family movie night! and movie night is not complete if you don’t have yummy snacks and drinks.  That’s why I had the idea to make our own potato chips to enjoy while watching the Illumination Entertainment’s Minions movie

Making your own potato chips is so much fun and the list of ingredients is really short, plus they are ready in less than 20 minutes. You can make them fried, but I decided to make them on the oven to used less oil, either way your kids will love them. At least one of mine mentioned it was a better idea to make our own instead of buying them at the store.

Anyway, here is the recipe:

Baked potato chips


Ingredients:

  • 3-4 big potatoes, I used yellow
  • ¼ cup of olive oil
  • Garlic powder
  • Salt and pepper
  • Chili powder, optional


To make the dip sauce:
Mayonnaise 
Sour cream
Mustard
Hot sauce, optional

Instructions:
  1. With a very sharp knife, cut the potatoes into thin slices.
  2. Using a paper towel, pat dry your potatoes to remove water excess.
  3. Line cookie sheet with parchment paper or foil. Brush a little olive oil.
  4. Place the potatoes on the cookie sheet, evenly spaced. Brush the top with oil.
  5. Season with garlic powder, salt and pepper. You can also add chili powder if you want.
  6. Bake the potatoes at 430ºF for 15-17 minutes, turning once until they are crisp. Do not leave your potatoes un-atended, otherwise they will burn, and this happens fast!




Once they are done, put the potato chips over paper towels to absorbe any oil excess and let them cool. Serve your potato chips with a side of dip sauce.

To make the dip sauce: mix mayonnaise, sour cream and mustard, add a dash of hot sauce if desired. Or you can make one with mustard but no hot sauce and the other with the hot sauce.


Movie night is really fun and a great way to spend time with the kids during the weekends or now that winter break is around the corner. Homemade snacks are always better, you know what’s in them and can make them any time you want.
