You might think it is funny, but on our last trip to Mexico for summer vacation, the first thing we did as we got there was going to the movies. Of course it wasn’t any kind of movie, it was a movie we were desperately waiting for since the day it was announced on TV and we just couldn’t help but to fall in love not only with the story but with the characters: The Minions. We knew that weekend the movie would be on theaters and my girls were asking for weeks when we’ll be able to go.
I know that when you are on vacation, going to the movies is not the first thing you would do, especially when you go to a place like my home country, were you can easily enjoy a day on the beach, eat delicious food either on the street or on any of the so many restaurant options you have or just spend time with the family. But my kids and I were so excited about it and one of my nieces was happy to go with us too. This is one of those movies you have to go and see in a movie theater. Truth to be told, it was worth it. The movie was so much fun and we spend the time laughing and loving everything about it.
- 3-4 big potatoes, I used yellow
- ¼ cup of olive oil
- Garlic powder
- Salt and pepper
- Chili powder, optional
Hot sauce, optional
Instructions:
- With a very sharp knife, cut the potatoes into thin slices.
- Using a paper towel, pat dry your potatoes to remove water excess.
- Line cookie sheet with parchment paper or foil. Brush a little olive oil.
- Place the potatoes on the cookie sheet, evenly spaced. Brush the top with oil.
- Season with garlic powder, salt and pepper. You can also add chili powder if you want.
- Bake the potatoes at 430ºF for 15-17 minutes, turning once until they are crisp. Do not leave your potatoes un-atended, otherwise they will burn, and this happens fast!
To make the dip sauce: mix mayonnaise, sour cream and mustard, add a dash of hot sauce if desired. Or you can make one with mustard but no hot sauce and the other with the hot sauce.
